Being a vegan and non-soy eater can be tough, as it means you cannot eat so many things. However, I haven’t let this stop me from relishing delicious cream cheese.

Yes, you heard me right. I love dipping my veggies and toast in my special my non-dairy and non-soy cheese spread. This is my treat when I am feeling peckish and want to eat unhealthy junk food. However, this cheese spread also makes a great dip, spread and salad dressing.

I am certain you too would enjoy this delicious and mouthwatering spread. Here is my secret dairy-free and non soy cheese recipe.

My Secret Dairy-Free Non Soy Cheese Recipe
Before I give you this recipe, I want to inform you about preparation and cooking time. It will take you a mere 15 minutes to prepare the ingredients and thereafter 48 hours to “cook” the ingredients. And, at the end of it all you will get a cup serving.

Instructions
  1. Place the cashew nuts in a glass bowl and cover with water. Place a lid on the bowl and set it aside to soak for 24 hours. Refrigerate the bowl.
  2. Drain the cashew nuts after 24 hours and rinse well with water.
  3. Blend the nuts in a food processor and then add the remaining ingredients and blend thoroughly until everything is a smooth paste.

  4. Set aside the paste for a couple of hours.
  5. Place clean cheesecloth over a tall container. I fold the cheese cloth twice to get thinner creamy cheese. Single ply will give you thicker and firmer cheese.
  6. Empty the paste into the cheesecloth and tie the ends of the cloth with a string.

  7. Hang the cheese bag in a pot to allow excess liquid to drain out.
  8. Place the pot in a warm place for about 24 hours.
  9. Remove the cheese from the cheesecloth and now flavor it as per your taste. I love to add fresh herbs to this non soy cheese recipe to enhance the flavor. Alternatively, you can add a little bit of sugar if you like sweetened cheese. Trust me when I say the sugar will not mar the taste of this delicious cheese spread. In fact, it will enhance it and you will love to eat it with your gluten-free and soy-free bread in the morning.

This is my secret non-dairy and non soy cheese recipe. Do try it and let me know whether you love it as much as I do. Remember, this recipe is for a single cup of cheese. But the way it tastes, I am certain you will be making it very often for yourself and your kids. When I tried it the first time, I had my reservations. However, once I tasted this delicious cheese, it was hard to keep me away from it. I gave it my own twist using herbs. When I get bored of herbs, I add vanilla or a little bit of sugar.
