The hardest part for some people who make the decision to become a vegan is giving up dairy products, specifically cheese. And the second thing is coming up with ideas for what to eat. But you don’t have to give up the foods you love to be healthier or more eco-conscious.

Instructions
  1. Dice 1/2 the onion and saute in a skillet until soft and translucent.

  2. Over low heat stir in the chili, ranch-style beans and refried beans and add a little water to keep it from being too thick. Add in the spices to taste, the flavor resembles the taste of taco seasoning. If you like it spicy, add some crushed red pepper flakes or cayenne pepper for some heat.

  3. Dice the tomatoes, remaining half of the onion, pepper and cilantro to make a pico de gallo. Squeeze the lime into the finished mix, sprinkle with salt and set aside.

  4. o assemble the nachos: Layer the bottom of a platter with tortilla chips and top with a layer of bean mixture followed by a layer of cheese. Begin another layer of chips followed by beans and cheese. The cheese in between the chips will start to melt as you make the layers creating a foundation for your toppings. Top with a third layer of chips and beans and spoon the pico de gallo and avocado or guacamole over the top layer. Put out a small bowl for condiments like sour cream, salsa or hot sauce for dipping.
